Ingredients

For the Chicken:

  • 1 chicken fillet, finely chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1/2 teaspoon black pepper

For the Stir-Fry:

  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • 1/2 cup chicken broth or water
  • 1 teaspoon sugar

Optional:

  • Sesame seeds
  • Green onions, chopped
  • Cooked rice

Equipment:

  • Large frying pan or wok
  • Mixing bowls
  • Measuring spoons and cups

Instructions:

Marinate the Chicken:

  1. In a bowl, combine the diced chicken with soy sauce, cornstarch, and black pepper. Let it marinate for at least 10 minutes while preparing the other ingredients.

Prepare the Sauce:

  1. In a small bowl, mix together 3 tablespoons of soy sauce, oyster sauce (if using), hoisin sauce (if using), sesame oil, chicken broth, and sugar. Set aside.

Cook the Chicken:

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
  2. Add the marinated chicken and cook for 3-4 minutes until almost cooked through and lightly browned.
  3. Remove the chicken from the pan and set aside.

Stir-Fry the Vegetables:

  1. Add another tablespoon of vegetable oil to the pan.
  2. Add chopped garlic and ginger, cooking for about 30 seconds until fragrant.
  3. Add broccoli florets and carrots. Stir and cook until the vegetables are tender, about 4-5 minutes.

Combine and Finish:

  1. Return the chicken to the pan.
  2. Pour the prepared sauce over the chicken and vegetables.
  3. Mix well and cook for another 2-3 minutes, allowing the sauce to thicken slightly and coat the ingredients evenly.

Serve:

  1. Sprinkle with sesame seeds and green onions if desired.
  2. Serve the stir-fry hot over steamed or fried rice.
