As a child, I always pleaded with my grandmother to prepare her famed stuffed cabbage rolls. Her culinary prowess was unmatched, and I could never replicate her technique. Hence, I turned to a recipe like this one: unstuffed cabbage rolls. While the essence remains the same, this rendition foregoes the rolling process, simplifying the preparation.

Ingredients:

  • 2 pounds of lean ground beef
  • 2 tablespoons of Olive Oil
  • 1 medium onion, finely chopped
  • 2 teaspoons of minced garlic
  • 15 ounces of tomato sauce
  • 2 cans of diced tomatoes
  • 1 teaspoon of Italian seasoning
  • 4 to 5 cups of chopped cabbage
  • Salt and pepper to taste

Instructions:

  1. Heat Olive Oil in a large skillet and add ground beef and onion. Sauté until beef is thoroughly cooked.
  2. Incorporate minced garlic, diced tomatoes, tomato sauce, chopped cabbage, Italian seasoning, salt, and pepper. Stir well to combine.
  3. Reduce heat to simmer, cover the skillet, and let it simmer for 15 to 20 minutes until the cabbage is tender.
  4. Garnish with chopped parsley before serving.

This dish pairs well with mashed potatoes, a crisp salad, or roasted vegetables. Its versatility allows it to complement a variety of sides or stand alone as a satisfying one-pan meal. Quick to prepare, it offers warmth and comfort on chilly evenings.
