Triple Chocolate Mousse Cake

Ingredients:

  • For the cake:
    • 5 eggs
    • 150 g powdered sugar
    • 135 g wheat flour
    • 15 g unsweetened cocoa powder
  • For the ganache:
    • 200 g dark chocolate
    • 20 cl liquid cream
  • For the glaze:
    • 150 g dark chocolate
    • 8 cl peanut oil
  • For greasing the pan:
    • 10 g soft butter
    • 10 g wheat flour

Yields: Enough for 6 people

Instructions:

  1. For the cake:
    1. Preheat the oven to 200°C (392°F).
    2. Grease the pan with butter and flour.
    3. Mix the flour and cocoa powder.
    4. In a blender, beat eggs and sugar until very foamy and tripled in volume.
    5. Gently fold in the flour and cocoa mixture until combined.
    6. Pour the batter into the prepared pan.
    7. Bake at 200°C for 20 minutes.
    8. Allow to cool completely.
  2. For the ganache:
    1. Place chocolate chips in a bowl.
    2. Heat the cream in a saucepan until it boils, then pour half of it over the chocolate chips.
    3. Let it sit for a moment, then gently stir until the chocolate is melted and smooth.
    4. Gradually add the remaining cream while stirring, ensuring it is well incorporated.
    5. Allow the ganache to cool.
  3. For assembly:
    1. Once the cake has cooled completely, cut it into three slices horizontally.
    2. Spread a layer of ganache between each slice.
    3. Pour the remaining ganache over the top of the cake, allowing it to cover the entire surface.
    4. In a separate bowl, melt the dark chocolate for the glaze, then stir in the peanut oil.
    5. Pour the glaze over the ganache layer, allowing it to drip down the sides of the cake.
    6. Refrigerate until set.
