Triple Chocolate Mousse Cake Recipe for Indulgent Delight


For the Cake:

  • 5 eggs
  • 150g powdered sugar
  • 135g wheat flour
  • 15g unsweetened cocoa powder

For the Ganache:

  • 20 cl liquid cream
  • 200g dark chocolate

For the Glaze:

  • 8 cl peanut oil
  • 150g dark chocolate

For Greasing Forms:

  • 10g soft butter
  • 10g wheat flour

Yields: Enough for 6 people


For the Cake:

  1. Preheat the oven to 200°C (392°F) and grease the pan with a mixture of butter and flour.
  2. Combine the flour and cocoa powder.
  3. In a blender, beat 3 eggs and sugar until the mixture becomes foamy and triples in volume.
  4. Gently fold in the flour and cocoa mixture, pour the batter into the prepared pan.
  5. Bake at 200°C for 20 minutes. Allow it to cool completely.

For the Ganache:

  1. Place chocolate chips in a salad bowl.
  2. Heat the cream in a saucepan until it boils, then pour half of it over the chocolate.
  3. Once the chocolate is melted, gently stir from the center outward.
  4. Add the remaining cream and let it cool.

For the Glaze:

  1. Melt butter and chocolate in a double boiler.

To Assemble:

  1. Once the cake has cooled, cut it into three slices, placing a layer of ganache between each slice.
  2. Apply a final layer of ganache, then pour the warm glaze on top, covering the entire cake.
  3. Leave the cake in a cool place.
