Ingredients:

  • 2 pounds fresh catfish fillets
  • 1 1/2 cups yellow cornmeal
  • 1 teaspoon all-purpose flour
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Accent
  • 2 teaspoons Creole seasoning or seasoned salt
  • 1/2 teaspoon lemon pepper
  • 1/2 teaspoon dry crab boil (optional)
  • Canola oil for frying

Instructions:

  1. In a shallow dish, combine cornmeal, flour, and all the listed spices and seasonings. Mix thoroughly.
  2. Heat canola oil in a deep fryer or cast-iron skillet to approximately 350 degrees F.
  3. Dredge each catfish fillet in the cornmeal mixture, shaking off excess coating.
