Perfectly Roasted Chicken Drumsticks and Thighs

Ingredients:

  • 2.6kg chicken drumsticks and thighs
  • 4 tablespoons Greek yogurt
  • 8 tablespoons olive oil
  • 2 tablespoons garlic ginger paste
  • 1½ tablespoons cumin powder
  • 1½ tablespoons onion powder
  • 1 tablespoon black pepper
  • 2 tablespoons paprika
  • 1½ tablespoons smoked paprika
  • 1 tablespoon Kashmiri chili powder or regular chili powder, to taste
  • Juice of half a lemon
  • 2 tablespoons salt, or to taste

Directions:

  1. Begin by making three deep slits in each chicken piece.
  2. In a bowl, combine Greek yogurt, olive oil, garlic ginger paste, cumin powder, onion powder, black pepper, paprika, smoked paprika, Kashmiri chili powder, lemon juice, and salt to create the marinade.
  3. Ensure the chicken pieces are dry before adding them to the marinade.
  4. Coat the chicken pieces thoroughly with the marinade, then cover the bowl with cling film and refrigerate overnight.
  5. Preheat the oven to 200°C and prepare a roasting tray with a rack and foil on the bottom.
  6. Arrange the marinated chicken pieces on the prepared roasting tray.
  7. Roast the chicken in the preheated oven for 35 minutes, flipping them over and basting them halfway through the cooking time.
  8. After 35 minutes, flip the chicken pieces again, baste them, and broil them on full heat for an additional 5 minutes to achieve a crispy exterior.
  9. If your oven does not have a broil setting, continue roasting the chicken for an additional 10 minutes until fully cooked and golden brown.
  10. Serve the perfectly roasted chicken drumsticks and thighs hot and enjoy!
