Ingredients

For the Crust:

  • 1/2 cup heavy cream

For the Fresh Strawberry Sauce:

  • 1 1/2 cups fresh strawberries, hulled and sliced (divided)
  • 1/4 cup sugar
  • Zest of 1 small lemon

Instructions

Preheat oven to 325 degrees (F).

For the Crust:

  1. Lightly coat a 9″ springform pan with non-stick spray.
  2. Blend graham crackers, sugar, and salt until finely crumbed. Add melted butter and mix well. Press firmly into the prepared pan.

For the New York-Style Cheesecake Filling:

  1. In a high-power blender or mixer, blend cream cheese and sour cream until velvety smooth.
  2. Add sugar and vanilla; beat until smooth, scraping down the sides.
  3. Introduce eggs and yolks; beat until smooth. Stir in flour until just combined.
  4. Swiftly mix in the cream until incorporated.
  5. Pour the filling into the prepared crust and spread evenly.
  6. Securely wrap the pan’s bottom in foil for a water-resistant crust.
  7. Place the pan in a larger, deep pan. Fill halfway with hot water for a water bath.
  8. Bake for 1 hour and 15 minutes. Turn off the oven and let the cheesecake sit for 45 minutes, undisturbed, with the door closed. It should still have a slight jiggle.
  9. Remove, run a knife gently around the edge, and let it sit for 15 more minutes before refrigerating for at least 6 hours.

For the Fresh Strawberry Sauce:

  1. Blend 1 1/4 cups strawberries, sugar, and lemon zest until smooth.
  2. Transfer to a bowl, stir in remaining sliced strawberries, and chill for at least 1 hour before serving.
