Grandma’s Homemade Chicken Schnitzel

Ingredients:

  • 4 chicken cutlets
  • ½ cup all-purpose flour
  • 2 large eggs
  • 2 teaspoons Dijon Mustard
  • 1 cup Panko Bread Crumbs
  • ½ teaspoon kosher salt
  • ½ teaspoon fresh ground black pepper
  • ½ teaspoon garlic powder
  • Vegetable oil for frying
  • Lemon wedges
  • Fresh parsley, chopped
  • Fresh dill, chopped

Instructions:

  1. Begin by arranging the flour on a rimmed plate or shallow bowl. Whisk together the eggs and Dijon Mustard in another shallow bowl.
  2. In a separate rimmed plate or shallow bowl, combine the Panko Bread Crumbs, salt, black pepper, and garlic powder.
  3. Pat dry the chicken cutlets with paper towels. Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.
  4. Dredge the chicken breasts in the flour, then dip into the egg mixture, and finally coat with the breadcrumb mixture.
  5. Once the oil is hot, add the breaded chicken cutlets and fry until golden brown. Flip and continue cooking until both sides are golden brown and the chicken is cooked through.
  6. Transfer the schnitzel to paper towels to absorb excess oil. Work in batches to avoid overcrowding the skillet.
  7. Serve with fresh lemon wedges for a zesty touch, and garnish with chopped Italian parsley and/or fresh dill. Enjoy!
