Indulge in a Flavorful Twist with Cajun Corn on the Cob
Ingredients:
- 4 ears of freshly husked corn
- 2 tablespoons of high-quality olive oil
- Salt and pepper, to taste
- 4 tablespoons of vegan mayonnaise
- â…“ cup of either sour cream or authentic Mexican crema
- 1 ½ teaspoons of zesty Cajun spice
- 1 ½ teaspoons of rich smoked paprika
- 1 teaspoon of aromatic onion powder
- 1 teaspoon of savory garlic powder
- 1 tablespoon of freshly chopped cilantro
- ½ cup of crumbled feta or authentic cotija cheese
- 1 tablespoon of freshly squeezed lime juice
- 1 teaspoon of optional chipotle or chili powder for added kick
Directions:
- Preparing the Oil and Spice Mixture: In a small bowl, whisk together the olive oil, half of the Cajun spice, half of the smoked paprika, garlic powder, onion powder, and salt and pepper to taste. Reserve any extra mixture for later use.
- Preparing the Corn: Lay out pieces of foil and place each ear of corn on a separate piece. Generously brush each ear of corn with the oil and spice mixture, ensuring even coverage. Wrap each ear tightly in foil.
- Baking the Corn: Preheat your oven to 425°F (220°C) and transfer the wrapped corn onto a baking sheet. Bake for approximately 30 minutes. For a softer texture, remove the corn from the oven after 30 minutes, brush with additional oil and spice mixture, and bake for an additional 20-25 minutes.
- Preparing the Mayo Sauce: While the corn is baking, combine the vegan mayonnaise, sour cream or crema, remaining Cajun spice, remaining smoked paprika, lime juice, and salt and pepper to taste in a medium bowl. Mix well to create a creamy, flavorful sauce.
- Finishing Touches: Once the corn is baked to perfection, carefully unwrap each ear and allow them to cool slightly. Brush with any leftover oil and spice mixture if desired, then generously coat each ear with the prepared mayo sauce. For a charred effect without a grill, consider using a grill pan lightly greased with olive oil. Transfer the corn to the grill pan and grill until desired char marks appear, being careful not to overcook.
- Serving: Sprinkle the corn with crumbled feta or cotija cheese, freshly chopped cilantro, and an extra dash of Cajun spice for an irresistible finish. Serve warm and enjoy the explosion of flavors with each bite.
