Exquisite Strawberry Pave Recipe

Ingredients:

  • 1 can of condensed milk
  • 1 can of milk
  • 2 egg yolks
  • 1 1/2 tablespoons corn starch
  • 2 boxes of fresh strawberries
  • 1 small can of cocoa powder
  • 1 tablespoon butter
  • 6 tablespoons refined sugar
  • 300 milliliters milk
  • 2 egg whites
  • 1 can of cream (whey-free)

Preparation Method:

  1. Prepare the Cream Base:

    In a blender, combine condensed milk, milk, egg yolks, and 1 tablespoon of corn starch.
    Blend until smooth, then transfer the mixture into a saucepan and cook over medium heat (170ºC to 190ºC),
    stirring continuously until it thickens into a creamy consistency.
    Once thickened, pour the cream onto a platter and allow it to cool.

  2. Prepare the Strawberry Layer:

    Cut the fresh strawberries into cubes.
    Once the first cream layer has cooled, spread the strawberry cubes evenly over it.

  3. Prepare the Chocolate Cream Layer:

    In the blender, combine cocoa powder, butter, remaining corn starch, 4 tablespoons of sugar, and 300 ml of milk.
    Blend until well combined, then transfer the mixture into a saucepan and cook over medium heat,
    stirring constantly until it thickens into a creamy consistency.
    Allow the chocolate cream to cool, then pour it gently over the strawberry layer in the pan.

  4. Prepare the Meringue Topping:

    In a clean, dry bowl, beat the egg whites until stiff peaks form.
    Gradually add the remaining sugar while continuing to beat the egg whites until glossy and stiff.
    Carefully fold in the whey-free cream into the meringue mixture.

  5. Assemble and Decorate:

    Gently spread the meringue and cream mixture over the chocolate layer in the pan.
    Decorate the top with additional fresh strawberries.
    Refrigerate the assembled pave for at least 3 hours before serving to allow it to set and chill thoroughly.
