Crusty Italian Bread Recipe

Ingredients (Yields 2 loaves):

  • 1 1/3 cups warm water
  • 2 1/4 teaspoons yeast
  • 1 tablespoon brown sugar
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons olive oil
  • 4 cups flour

Instructions:

  1. In a mixing bowl, combine warm water, yeast, and brown sugar. Stir and allow it to sit until it starts to bubble and foam.
  2. Add olive oil and salt. Gradually incorporate the flour until the dough pulls away from the sides of the bowl. Utilize the dough hook for a few minutes.
  3. Cover the bowl and let the dough rise until doubled, approximately 30 minutes.
  4. Punch down the dough, divide it in half, and shape it into two loaves. Cover with a damp cloth and let it rise until doubled.
  5. Preheat the oven to 375 degrees. Beat together 1 egg and 1 tablespoon water. Brush the risen loaves with this mixture.
  6. Make a single, quick, long cut down the center of each loaf with a sharp knife.
  7. For the secret touch, place at least 1 cup of hot water in a shallow pan on the rack underneath the bread. The steam will create a perfect crust. Add more water during baking if needed.
  8. Bake for 25-30 minutes or until the loaves turn golden brown and produce a hollow sound when tapped.
  9. Remove from the pan and let them cool on racks. Optionally, enhance the hot crust by rubbing butter over it. Enjoy your delightful Crusty Italian Bread!
