  • ¾ cup finely chopped onion
  • â…“ cup dried bread crumbs
  • 1 pound lean ground beef
  • ¼ cup your favorite barbecue sauce
  • 2 tsp chili powder
  • ¾ tsp salt
  • 1 egg, beaten

For the Potato Layer:

  • Potatoes
  • 1 package instant butter-flavored mashed potato mix
  • â…” cup evaporated milk
  • 1 tbsp chopped parsley
  • 1 tbsp butter
  • 1 tsp garlic powder
  • 1 cup cooked and crumbled bacon
  • ¼ cup crispy fried onions
  • â…” cup shredded Monterey Jack cheese

Preparation:

  1. Preheat the oven to 375°F and lightly spray a 9×9 baking pan.
  2. In a large bowl, combine the ground beef, chopped onion, barbecue sauce, bread crumbs, beaten egg, chili powder, and salt.
  3. Press the meat mixture evenly into the bottom of the prepared baking pan.
  4. Bake uncovered for 20 minutes.

  9. Place the casserole under the broiler, about 6 inches from the heat source, and broil for 3 minutes or until the cheese is melted and bubbly.
