Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream

For the Topping:

  • 1 cup sour cream
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract

Directions:

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan.
  3. In a large bowl, beat together the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Fold in the sour cream until smooth.
  6. Pour the cheesecake filling over the crust and smooth the top with a spatula.
  7. Bake for 50-55 minutes or until the center is set and the edges are lightly browned.
  8. While the cheesecake is cooling, prepare the topping by mixing together sour cream, sugar, and vanilla extract. Spread over the cooled cheesecake.
