Baked New York Potato Strips and Loaded Shrimp

Potato Recipe:

Jumbo Baked Potato:

Start by brushing the jumbo potatoes with olive oil and seasoning with salt and pepper. Preheat the oven to 450 degrees Fahrenheit and bake until the potatoes are tender, approximately 1 to 1.25 hours.

Shrimp:

Prepare the shrimp by removing the tails and deveining them. Season with olive oil and a sprinkle of Ashley’s Seafood Secret. Pan-fry the shrimp over medium heat for 2-3 minutes on each side until they curl into a nice “C” shape.

Vegetables:

Saute your choice of vegetables in a pan over medium-high heat with a touch of olive oil, salt, pepper, and garlic powder until they are soft, usually for about 5-7 minutes.

Cheese Sauce:

Ingredients:

  • 1 1/2 cups cream
  • 1/2 cup grated fresh Parmesan cheese
  • 1 tablespoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon Cajun seasoning
  • 1/2 teaspoon Italian herbs

Instructions:

  1. Heat the cream over medium heat until bubbles start to form, then add the grated Parmesan cheese and spices.

Assembly:

Cut open the baked potato lengthwise and fluff up the inside with a fork. Add a pat of butter and a sprinkle of grated cheese. Then, layer on your desired ingredients, including the sautéed vegetables and loaded shrimp. Drizzle the cheese sauce generously over the top. Serve and enjoy!
