Apple Pie Cupcakes Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, at room temperature
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 2 cups peeled, diced apples
  • 1/4 cup brown sugar
  • 1 tsp cornstarch

Directions:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
  3. In a large mixing bowl, cream together butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Slowly add the dry ingredients to the butter mixture, alternating with milk, mixing just until combined.
  6. In a small bowl, toss diced apples with brown sugar and cornstarch.
  7. Gently fold the diced apples into the batter for this delightful fall dessert recipe.
  8. Spoon the batter into the prepared cupcake liners, filling them about 2/3 full.
  9. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow cupcakes to cool in the tin for a few minutes, then transfer to a wire rack to cool completely. Serve these Apple Pie Cupcakes alone or with a dollop of whipped cream for an extra indulgent apple dessert.
